Wednesday night is date night.
Here I stray from baking to showcase the delightful grill skills of my permanent roommate (a term of endearment I have pilfered from another married comrade). To me, grilling is a form of enticing sorcery that I leave up to the warlock of the household. He works his magic perfectly every time.
The bread comes from the Publix Bakery, a 5-grain whole wheat loaf that is light, slightly chewy, and daintily textured with small seeds on the crust.
After the salmon came off the grill I generously sprinkled shavings of Prima Donna cheese, found in the fancy cheese section at the grocery store ( I can rarely resist purchasing a new fancy cheese to sample). Other toppings include grilled onions, chipotle pickle slices, fresh spinach, sliced tomato, and avocado. I always spritz lime juice on the avocado along with a dash of salt and pepper.
The beer featured here is Rocket Girl, a golden lager from Asheville Brewing Co. purchased on a trip to North Carolina in February. https://www.ashevillebrewing.com/brews.html
We then proceeded to take a big ol’ Guy Fieri-style bite of these sandwiches, smearing the juice on our faces as the toppings slid around, a few plopping down onto the plate.
Wednesday night perfection.
