Cherry & Dark Chocolate Morsel Oatmeal Cookies
3 1/2 Cups Whole Rolled Oats
1 Cup Flour
1 Tsp. Baking Powder
1 Tsp. Salt
1 ½ Tsp. Cinnamon
¼ Tsp. Ground Ginger
2 Sticks Butter, Room Temperature
1 ½ Cups Brown Sugar
2 Eggs, Room Temperature
2 Tsp. Vanilla
1 Cup Dried Cherries
1 Cup Dark Chocolate Morsels
Preheat oven to 335°F
In a large bowl, combine the oats, flour, baking powder, salt, cinnamon, and ground ginger
Using an electric mixer, cream butter and sugar
Add eggs one at a time, followed by the vanilla
Gently incorporate the dry ingredients into the wet
Use a spatula to fold in the dried cherries and chocolate morsels
Scoop onto cookie sheets and bake 8-10 minutes til the edges are crisp and the center is just set
